White Bean Potato Dill and Lemon Soup

With skies greying, morning and nights becoming chillier and chillier, makes it perfect soup weather! Nothing's better than snuggling up with your favorite comfy blanket a good book and a hot cup of soup to keep you nice and cozy. This is a simple and quick recipe,  great for a healthy lunch or dinner option and one of my favorites! Ingredients: 1 tablespoon olive oil 1 small onion, chopped 4 cups chicken or vegetable broth 3 medium Yukon Gold potatoes, peeled and cubed 1 or 2 garlic cloves, minced 2 t. dill 1 can (15-1/2 ounces) navy beans, rinsed and drained ¾ cup plain almond milk (or regular milk if you are not vegan) Juice of a half of a lemon Salt and pepper to taste In a large sauce pan sauté the onion and garlic. Slowly add the broth, potatoes, and dill.  Bring to boil reduce heat and let simmer for about 20 minutes. Take heat down to low, add in lemon juice and milk. Turn off heat let sit for about 5 minutes and enjoy!
